The weather has been crazy cold lately for April in California, so I was craving soup. I have had this left over turkey frozen in the deep freezer since the holidays and I finally decided to use it. This soup is very flavorful and easy. Glad I finally made it. I also made enough to freeze in individual containers to take out and eat just a small amount whenever I'm craving it. With that being said, I guess I still haven't finished all the holiday turkey. LOL!

Recipe
- 4 cups cooked and shredded turkey
- 6 cups water
- 2 chicken bouilllon cubes
- 1 onion, chopped
- 3 carrots, sliced into thin slices/rings
- 3 tablespoons butter
- cayenne to taste
- 1 teaspoon tumeric
- salt and pepper to taste
- 1/2 bag 8 oz egg noodles

- Bring 6 cups water to boil in large pot. Add turkey and bouillion cubes and boil for about 30 minutes. Add onion, carrots, butter and seasonings. Cook covered on medium heat for 5-10 minutes. I like the carrots to remain crunchy so do not over cook. Add noodles and cook covered on high for about 5-10 minutes. Noodles should be al dente. Enjoy!
