Coconut Chocolate Chip Baked Oatmeal

Great start to the morning. I just started using almond milk and I love it! I also eat this for brunch or lunch!

- 1 1/2 cups whole rolled oats
- 1 cup vanilla almond milk
- 2 tbs coconut butter
- 2 tbs butter
- 1/3 cup sweetened coconut flakes
- 2 ripe bananas
- 1/4 cup chocolate chips
- 2 tbs sweetened coconut flakes
Coconut Chocolate Chip Baked Oatmeal Directions
- Preheat oven to 350 degrees.
- Spray a small baking dish with cooking spray. Then to the baking dish add oatmeal and almond milk. Melt coconut butter and butter together in the microwave until melted. Stir melted butter into oats. Stir coconut flakes into oats.
- In separate bowl mash bananas with a fork. Stir bananas into the oat mixture. Top with chocolate chips. Sprinkle 2 tbs coconut flakes on top.
- Bake for 20 minutes. Once done, I also broiled it for a few minutes (about 2) on high to make the top crispy.
- Serve in individual bowls with warm almond milk poured over.
