Raw Collard Green Salad

- 1 bunch collard greens. De-stem and chop the collard greens.
- 1/2 bell pepper, chopped
- 1/4 red onion, chopped
- 2 celery stalks, chopped
- 1 clove garlic, minced
- Juice of 1 lemon
- 3 tablespoons extra virgin olive oil
- 3 teaspoons lavender honey (regular honey is fine. I just happened to have lavender honey from a farmers market)
- Salt and pepper to taste
- Red crushed pepper to taste
Raw Collard Green Salad Directions
- Combine collard greens, bell pepper, celery, garlic, and onion in medium bowl. In separate bowl, whisk together lemon juice, olive oil, honey, salt, pepper and red crushed pepper. Taste and adjust salt, pepper and crushed pepper if needed. Pour into vegetables and mix well. Chill covered for at least 8 hours (24 hours is best). Enjoy this delicious and crispy salad!
