Cabbage and Beet Salad

I was craving cabbage and put this together at the spare of the moment one day. This recipe uses apple cider, but I have also used apple cider vinegar for a more tart taste (can sweeten with honey) and it was still very good!

Cabbage and Beet Salad

Ingredients

For 4 Servings

  • 1/2 small head of cabbage, chopped
  • 4 slices cured salt pork, chopped into small pieces
  • 1 1/2 cup apple cider
  • 1/4 piece of onion, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 8.8 oz cooked beets, cut into small pieces
  • 1 6 oz container of feta cheese, crumbled

Cabbage and Beet Salad Directions

  1. Fry salted pork in medium to large deep skillet or pot until crisp. Remove pork from pan and set aside. In same skillet, add onions and saute for about 1 minute. Add apple cider and bring to a boil. Let cook and reduce for about 15 minutes.
  2. While the cider is cooking, in a large bowl add the cabbage and beets.
  3. When the cider/onion mixture is done, add salt and pepper. Then pour over cabbage and beets and mix well. Then add pork and feta and mix till combined. Eat warm or chill for one hour then eat.
  4. Enjoy!
