Red Beans with Pork Feet

Ingredients

For 4 Servings

Recipe

  • 1 cup red beans
  • 1 pigs foot, cut in half lengthwise
  • 6 cloves garlic, chopped, or as many as you want
  • 1 onion chopped in large chunks
  • 1 chicken bouillon
  • 2 Tbsp bacon fat
  • ½ hot pepper
  • Garlic powder
  • Salt and pepper to taste
  • Enough water to cover

Red Beans with Pork Feet Directions

    In medium pot on stove add all ingredients. Make sure the water covers the pigs feet and beans entirely.

    Cook on high heat until there is a rapid boil. Once boiling turn heat to low, cover and cook on low for 4-5 hours.

    NOTE: Begin checking for doneness after the beans have cooked for one hour. Depending on their age, size, and variety, beans can take anywhere from an hour to three hours to cook through. Be patient. Keep the beans a gentle simmer and taste frequently as they start to become tender. Add more water as needed to keep the beans submerged, and stir occasionally.

    Optional: When done cut up another onion or green onions and place on top of beans in pot.
