  • 2 ruby red grapefruit, juiced with pulp included. I even scraped out some of the insides of the grapefruit once juiced and used it as well
  • 1 jalapeno (or hot pepper of your choice), chopped
  • 2 tablespoons ginger powder
  • 2 tablespoons black pepper
  • 4 teaspoons Adobo seasoning with cumin
  • Salt to taste
  • 6 tablespoons butter
  • 7 Green Onions, white and green part chopped
  • 2 cups fresh pineapple chunks
  • 1/2 red onion
  • 6 sprigs fresh thyme, leaves removed
  • 1/2 cup sliced almonds
  • 2 cups rice
  • 5 cups fresh spinach, chopped
  • 2 cups white wine
  • Marinade from chicken
  • salt to taste
