Sea Urchin Salad

  • 1 fresh Sea Urchin
  • freshly squeezed lemon juice from 1 lemon
  • freshly squeezed lime juice from 1 lime
  • 0.5 mango, chopped
  • 0.25 red onion, chopped
  • 0.33 cup chopped cilantro
  • salt to taste

Sea Urchin Salad Directions

  1. With kitchen shears, cut open the bottom of the sea urchin in a circular motion. You will have exposed the insides of the urchin. Rinse thoroughly. With a spoon, scoop out the yellow parts and place in a bowl. It is very delicate, so be gentle so that you won't break up the larger pieces into too many small pieces.

    Once in the bowl, rinse the urchin meat several times with water to remove blood, veins and shell pieces.

    When done rinsing, place in a different bowl and add lemon juice, lime, red onion, cilantro and mango.  Mix well.

    Let marinate in the refrigerator for about 10-15 minutes. The citrus juices will cure the raw urchin meat.
    Salt to taste.


    Serve alone or with bread, crackers
