Summer Corn Salad

Refreshing and delicious! My mom always grew fresh corn in the backyard so we had this salad often with the fresh basil she also grew.

For 3 Servings
Recipe
- 2 ears of fresh corn, shucked
- 2 tablespoons pomegranate vinegar (you can also use red wine or apple cider vinegar)
- 1/3 cup red onion, chopped
- 1 tablespoon good olive oil
- 1 tablespoon fresh basil, chopped
- Salt and freshly ground black pepper to taste
- A sprinkle of cayenne pepper, optional
Summer Corn Salad Directions
- Boil salted water in a large pot. When boiling, add the corn and boil for about 2-3 minutes on high boil. Drain. When cool, cut the kernels off of the cob. Make sure you cut close to the cobb so that you get the entire kernel, but don't cut into the cob.
- Add the kernels to a bowl with all other ingredients and toss together. Taste and adjust seasonings as needed. Chill for about 30 minutes before serving. Enjoy!
