I remember when my mother first learned how to make bread. It was after we returned from visiting my grandmother in Tupelo, MS. My grandmother taught her how to make dinner rolls that took more time and were delicious. But my mother became hooked on making bread, rolls, etc and needed to know how to make them quickly for last minute guests. I recently found this recipe in her belongings. I don't know where she got this recipe but it was handwritten on a scratch piece of paper and she had titled it "When People Just Show Up". LOL!!! Imagine how impressed people were with the smell of fresh bread baking in the house.

Just In Time For Company Dinner Rolls

Ingredients

Recipe

  • 1/3 cup melted butter
  • 1 cup plus 2 tablespoons warm water
  • 2 tablespoons active dry yeast ( I used bread machine yeast)
  • 1/4 cup sugar
  • 1/2 teaspoon salt
  • 1 egg
  • 3 1/2 cups flour (I used all purpose wheat flour. You can use bread or all purpose)
  • Melted butter to brush on top

Just In Time For Company Dinner Rolls Directions

  1. Preheat oven to 400 degrees.
  2. I used a stand mixer for this, but you can simply mix with your hands like my mother did. We did not have a fancy stand mixer back then..lol!
  3. Using the bowl of the stand mixer, add the warm water, butter, yeast and sugar. Combine. Then let rest for 20 minutes.
  4. Using a dough hook, mix 2 cups of the flour, the salt and the egg into the yeast mixture. Mix until a ball of dough forms. Gradually add the rest of the flour (1 1/2 cups) 1/2 cup at a time.
  5. Shape dough into 12 balls (I had 14) and place in a buttered 9x13 pan. Let dough rest for 15 minutes. They will enlarge. 
  6. Brush melted butter on top. Bake for 10-15 minutes or until tops are brown. Remove from oven and brush with more butter. Enjoy!
