Grapefruit Marinated Chicken Thighs with Pineapple Rice

- 4 chicken thighs
- 2 ruby red grapefruit, juiced with pulp included. I even scraped out some of the insides of the grapefruit once juiced and used it as well
- 1 jalapeno (or hot pepper of your choice), chopped
- 2 tablespoons ginger powder
- 2 tablespoons black pepper
- 4 teaspoons Adobo seasoning with cumin
- Salt to taste
- 6 tablespoons butter
- 7 Green Onions, white and green part chopped
- 2 cups fresh pineapple chunks
- 1/2 red onion
- 6 sprigs fresh thyme, leaves removed
- 1/2 cup sliced almonds
- 2 cups rice
- 5 cups fresh spinach, chopped
- 2 cups white wine
- Marinade from chicken
- salt to taste
