Baked Eggs with Bacon

- 3 slices of bacon
- 2 slices onion
- Handful of fresh spinach, about 1 cup of packed leaves
- 1 slice of bread, toasted and buttered, I used 12 grain but any bread will work
- 2 thin slices havarti cheese
- 1 large egg
- 1 tablespoon heavy whipping cream
- Salt and pepper to taste
- A pinch each of fresh herbs of your choice. I used rosemary, parsley and thyme
Baked Eggs with Bacon Directions
- Preheat oven to 400°F. Fry bacon in large skillet over medium heat until crisp; transfer to paper towels. Pour off all but 1 tablespoon drippings from skillet; reserve drippings. Add onion and spinach to pan, sprinkle with salt and pepper, and toss over medium heat, 1 minute. Transfer to bowl. Brush one small ramekin with drippings.
Tear the bread into pieces and put into ramekin. Put cheese over bread. Put spinach on top of cheese, then crumble bacon over spinach. With back of spoon, shape a well in center of each ramekin. Gently crack 1 egg into well in ramekin, keeping yolk intact. Drizzle 1 tablespoon cream over egg. Sprinkle with salt and pepper and fresh herbs.
Bake eggs until whites are just set but yolks are still runny, 15 to 18 minutes. - Buttered Toast
