I'm always eating fish and wanted a sauce to eat with it. I asked my friend from Grenada and she gave me this recipe. She says they eat it over fish in the Caribbean all the time. The recipe does not have exact measurements so just play with the flavor and amounts and you will like it. I was testing it and only made enough to cover one piece of fish. It is delicious!
Some water (a little at a time) to make a sauce. The consistency should be thick
Fish Sauce Directions
Melt the butter in a pan over medium heat. Add onions and saute for about 1 minute. Add remaining ingredients and taste for seasoning. Simmer on low for approx. 5 minutes. The onions should still be a little crisp...you do not want them soggy.
I put this over fish that I ate with cheese grits.
