Melt 2 tablespoons bacon fat in large skillet over medium high heat. Fry apples in bacon fat for about 2-4 minutes. Apples should still be crisp.
Add garlic cloves and hot pepper. Fry until garlic is fragrant, about 2 minutes.
Add remaining bacon fat, cabbage, onion, salt and pepper to taste. Fry about 3-5 minutes or until the cabbage is the consistency you desire. I leave mine pretty crisp....the onion is also still crunchy.
