In a large pot, place smoked turkey leg and fill with enough water to cover turkey leg. Boil on high until meat falls off bones easily. Check pot periodically to add more water if needed. Do not burn. When done, there should barely be any water left in the pot (just a little puddle like 1/2 to 1 cup water) and meat can easily be shredded or pulled off the bone.
Pull meat off bone and shred into small pieces and discard the bone. Add the garlic and jalapeno and cook until fragrant, about 3-5 minutes. Add the other ingredients and place a top on the pot. Simmer on low to medium low for about 30 minutes. Taste and add more salt and pepper if needed. I simmer mine for less than 30 minutes because I prefer it crunchy. Enjoy!
